Cranberry White Chocolate Chip Oatmeal Cookies

Ingredients

  • 1 cup butter softened
  • 1 cup dark brown sugar
  • 2 eggs room temp
  • 1 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 1/2 cups flour
  • 3 cups old fashioned oats not quick oats
  • 1 1/2 cups white chocolate chips
  • 1 1/2 cups dried cranberry bits

Instructions

  • Preheat oven to 350°
  • In a large bowl, cream butter and brown sugar together. 
  • Add eggs and vanilla. Mix well.
  • Add in salt and baking soda. Stir.
  • Gradually add in flour. 
  • Gently stir in old fashioned oats.
  • Once the mixture is combined, stir in white chocolate chips and dried cranberries.
  • Cover bowl and refrigerate for about 25 minutes.
  • Using a cookie scoop, drop by scoopfuls on a cookie sheet and cook for about 14 minutes.
  • Let cookies cool completely so they don't crumble.
